Cube Steak

Cube Steak

Mechanically Tenderized Typically packaged two steaks per package.

Beef cube steak is a cut of beef that has been tenderized by passing it through a machine with small blades to break down the muscle fibers. This process creates a textured surface with little indentations or "cubes" (hence the name). Cube steak is typically cut from tougher, leaner cuts of beef like the round or chuck, and it’s often used in dishes where tenderizing is necessary, such as chicken-fried steak, steak sandwiches, or smothered steak.

Here are some ways to prepare cube steak:

1. Chicken-Fried Steak

  • Ingredients: Cube steaks, flour, eggs, milk, seasoning (salt, pepper, garlic powder, paprika), oil (for frying), and gravy (optional).
  • Instructions:
    1. Season the cube steaks with salt, pepper, and any other desired spices.
    2. Dredge the steaks in a mixture of flour, salt, and pepper.
    3. Dip in a milk-and-egg wash, then coat with more seasoned flour.
    4. Fry the steaks in hot oil until golden brown on both sides.
    5. Serve with gravy, mashed potatoes, or vegetables.

2. Smothered Cube Steak

  • Ingredients: Cube steaks, onions, garlic, beef broth, flour, oil, salt, pepper, and seasonings.
  • Instructions:
    1. Brown the cube steaks in a skillet with oil. Remove them and set them aside.
    2. In the same skillet, sauté onions and garlic until softened.
    3. Add some flour to the skillet and cook for 1-2 minutes to form a roux.
    4. Gradually add beef broth, stirring constantly, until the gravy thickens.
    5. Return the cube steaks to the skillet, cover, and simmer until tender (about 30 minutes).
    6. Serve the steaks with the gravy and your choice of sides.

3. Cube Steak Sandwiches

  • Ingredients: Cube steaks, sandwich buns, lettuce, tomato, onions, cheese, and condiments.
  • Instructions:
    1. Season and cook the cube steaks as you would for chicken-fried steak (pan-fry or grill).
    2. Toast the sandwich buns.
    3. Assemble the sandwich with the cooked steak, lettuce, tomato, onions, and your favorite condiments (e.g., mustard, mayo, or ketchup).
    4. Add cheese, if desired, and serve.

Cube steak is an affordable and versatile cut that can be cooked in many different ways depending on your preferences!
