Get your beef prepared just the way you want it! Total weight is approx. 320 lbs. Avg wait time from deposit to shipping is 8-12 weeks. *The price shown is a deposit only. An additional fee of $1500 will be charged to your card prior to pickup.

You will be provided a cut sheet to indicate how you would like your beef processed.  Please note deposit is nonrefundable.

When you order a half beef, you're buying a share of a whole cow, which will be butchered, processed, and packaged for you. The specific cuts you receive will be a wide assortment that you can use for different types of meals. Here's an idea of what you choose to get with a half beef order:

1. Steaks

  • Ribeye (bone-in or boneless)
  • T-bone or Porterhouse steaks
  • New York strip 
  • Sirloin steaks (various cuts)
  • Flank steak
  • Skirt steak
  • Filet mignon (often as part of the tenderloin)

2. Roasts

  • Chuck roast
  • Rib roast (Prime rib)
  • Brisket (may be available in different cuts, depending on how it's processed)
  • Round roast (Top round, bottom round)
  • Sirloin roast
  • Tenderloin roast

3. Ground Beef

  • Ground beef (usually 80-85% lean)
  • Some beef is also ground into specialty blends or sausages if you request it

4. Stew Meat and Other Cuts

  • Beef stew meat
  • Soup Bones or Shank (good for slow cooking or soups)
  • Oxtail
  • Short ribs

5. Other Possible Cuts

  • Beef liver (if you like organ meats)
  • Beef tongue (for those who want a unique option)
  • Beef bones (for making broth or stock)
  • Beef heart (if you enjoy organ meats)

6. Specialty Cuts

  • Some butchers may offer additional cuts such as Korean ribs (thin cut short ribs) or hanger steak if requested.

Customization

We will ask you how you'd like specific cuts packaged (e.g., thickness of steaks, weight of ground beef packages, etc.  Some choices may require extra expense.

Size & Weight

  • A half beef typically weighs approximately 300 lbs of hanging weight, which is the weight of the beef after it’s been slaughtered and butchered but before it's packaged. After processing, you will end up with approximately 160 lbs of meat, depending on bone content and cuts.

So, with a half beef order, you'll receive a variety of cuts for grilling, roasting, stewing, or ground beef for burgers, tacos, and more!
